You can use vCenter to generate log bundles of the esx/esxi host in question (from the vCenter "File" menu dropdown). The resulting zip file will contain copies of the logs and will not require you to enable SSH. You can also setup a syslog server (many open source Linux and windows options that are no cost) and have logs sent directly to the syslog server where you can analyze them in real time. Lastly, if you have the vMA appliance installed you can use the vilogger daemon to collect the logs on a schedule.
