You have 2 options.
1- Present the SAN LUN to the ESXi host itself, create a datastore on this host and then create a virtual disk on this datastore for specific VM.
2- Present and RDM LUN to the ESXi host and assign it directly to the VM, in this case, you cannot share this LUN with other VMs.
