You will be fine using an iSCSI LUN in ESX. Your NAS device should be the bigger concern (if you lose the storage, you would lose everything no matter what protocol or medium). Just make sure it is an enterprise device. You could also potentially use NFS from your NAS device (if supported). As with any environment, make sure you backup! You will be at no greater risk using iSCSI than an RDM.
