It's interesting you were able to create a datastore on the installation disk at all after deleting it (see http://kb.vmware.com/kb/2000454). Out of interest, can you run partedUtil getptbl "/vmfs/devices/disks/<DeviceName>" and post the output (see http://kb.vmware.com/kb/1036609 for details)
