This would put them on some network of VMWare flavour (honestly, I have yet to understand these networks) and I figured that if they both are on this network they should be able to see each other and the host but nothing more.

Yes, this is exactly what a VMware Host-Only (VMnet1 by default) does.  It enables communication on the VMnet1 Subnet between the Guests themselves and to the Host but not beyond the Host.  You can, if you want, isolate the Host from the Host-Only Virtual Network via the Virtual Network Editor and then only the Guests would be able to communicate with each other.

 

Seriously, you need to read Chapters 14 & 15 in the VMware Workstation 7 Users Guide as these two chapters cover the Networking aspects and will give you a much better understanding of the VMware Virtual Network Infrastructure.
